Evoke 1923

Nestled in the foothills of Evergreen, Evoke 1923 sits at an altitude of about 7,220 feet above sea level. Evoke 1923 bills itself as “blurring the lines of cuisines” with global flavors, seasonal ingredients, and what they call a “multi-dimensional tasting experience.”

The building itself is steeped in history: originally built in 1923 as the “Marshdale Lodge” and later used as the Rocky Mountain Tea Room, rehearsal space for the Colorado Philharmonic and other incarnations. Chef and owner Rand G. Packer (and wife/co-owner Tiffani) have transformed the space into an elegant yet approachable fine-dining venue.

Mountain dress code is always a little more toned-down, so I went with a sleek black turtleneck and jeans paired with boots. The restaurant itself notes they welcome “attire from black tie to just back from the trail.” We booked this spot for a fancy dinner before heading up to a yurt reserved for Valentine’s Day weekend in the mountains. This is a great preamble to a beautiful getaway in Evergreen. Definitely make this a stop next time you’re up there.
